In 1896, entrepreneur Emilio Ortega came to Anaheim, California to start a cannery and brought with him his prized pepper variety, which soon became known and loved as the Anaheim pepper. Vigorous, bushy, upright plants produce tapered, dark green fruits that grow to an average length or 7 inches and turn red when mature. Moderately hot (2000 Scoville heat units) and excellent for canning, drying, or using fresh. 80 days to maturity. Planting Instructions: Start Anaheim Chile seeds indoors in seed trays or small, individual pots 8 weeks before the last expected spring frost. Sow them 1/4" deep and keep the soil at 80-85°F until germination, which can take between 7 and 21 days. Provide sunlight or a grow light for 12-16 hours a day. When outdoor temperatures reach 60-65°F during the day and no less than 50°FF at night, transplant the seedlings 12-16" apart. Exposing the plants to the weather for several hours a day before transplanting may help prevent shock. Peppers also grow well in containers or raised beds.
