There are about 40 varieties of this type of corn, and all members of this group are believed to have originated from a particular variety from Guatemala. Over the centuries Guatemalan seeds were traded north into Mexico and further south into Central and South America by the many indigenous groups. The corn crossed with other landrace varieties and many related nitrogen-fixing varieties developed over time. These varieties of corn have been grown in Mesoamerica by the indigenous people for many centuries.While many of these varieties are grown in mountain regions, some are adapted to lowlands as well. The actual corn kernels can come in a variety of colors, ranging from white, red, pink, blue, and colors in between. This variety is primarily blue/purple/black kernels.The corn is eaten as corn-on-the-cob while still tender, or dry as a grain for making posole, atole, or masa for tortillas and other dishes. The tall stalks are used as forage for livestock and as fuel for cooking. This corn grows in poor soils with little to no additional fertilizer. It actually captures atmospheric nitrogen, an essential nutrient that the plants needs, from the air!Research has shown that the less fertilizer that is applied to the maize, the more nitrogen it will scavenge from the soil and air via bacterial symbiosis. These landrace varieties of corn produce aerial roots along their stalks that exude a thick mucus-like gel substance that harbors beneficial bacteria that capture and fix the atmospheric nitrogen into a form that the corn plant can absorb and utilize. The gel production is more pronounced during periods of high humidity or fog, along with cooler temperatures. In 1983 a colleague isolated a strain of bacteria from the roots of the corn. This symbiotic relationship between the corn plant and the bacteria is similar in function to how legumes have root-dwelling bacteria that perform a comparable job for members of the bean-plant family. This interesting genetic trait is believed to have been inherited by the nitrogen-fixing maize from its wild ancestor, the Teosinte, which also has the same nitrogen-fixing trait.
